An incredibly easy recipe, this is one of my favorite ways to use up any leftover rice, protein and veggies I have:
* Shred the meat
* Finely chop the veggies
-Heat your preferred oil in a large skillet (I prefer cast iron)
-Saute the veggies. When soft, add the rice
-Press the rice into the pan-I try to get some
browning/crusting (love that crunch!)
-Whisk an egg or two and drizzle over the rice, stir to cook
-Add whatever spices/sauces you like
This is such a versatile recipe. You can use whatever you have left in the house from veggies, to protein, to sauces. It’s Pantry Perfect!
